White Bean Chili
This recipe probably serves about 6
A light and healthy chili recipe, full of crisp summertime vegetables and enhanced with fresh lemon. This can be made either vegetarian or meaty.
Ingredients:
- 1 onion
- 1/3 c. shredded carrot
- 3 ribs celery, chopped
- 1 tsp. red chili flakes
- 1 tsp. Italian seasoning blend
- 1 bell pepper, diced
- 3 zucchini, cut into chunks
- 1 can diced fire roasted tomatoes
- 5 cloves garlic, minced
- 1 can cannelini beans + 1 can tuscan bean mix (available at Trader Joe's) (or 2 cans of cannelinis)
- 2/3 c. chicken or vegetable broth
- Juice of 1 lemon
- A handful of chopped parsley (a couple of tablespoons)
Directions:
In a stock pot over medium heat, combine the first 5 ingredients. Cook until the onion is translucent.
Add chicken and cook 3 more minutes.
Add in bell pepper and zucchini and cook 2 more minutes.
Add tomatoes, garlic, beans and broth. Cook 20 minutes or until the liquid is reduced to chili consistency.
Add lemon juice and serve.
