Minestrone
This recipe probably serves about 6
Ingredients:
- 1 onion, chopped
- 1/2 cup chopped carrot
- 4 ribs of celery, sliced
- 1 bell pepper, chopped
- 3-6 cloves of garlic (to taste)
- 2 tsp. Italian seasoning
- 1 tsp. chile flake
- 1/2 tsp. celery salt (optional)
- 1/2 tsp. black pepper
- 4 roma tomatoes, chopped
- 4 cups of vegetable broth
- 2 cups tomato juice (or water)
- 1 can canellini or garbanzo beans
- 1/2 head napa cabbage, sliced
- 2 cups of fresh or 10 oz. frozen spinach
- 1 can of artichoke hearts packed in water, roughly chopped (optional)
- 1/4 cup parmesean, plus more for garnish
Directions:
- Cook onion, carrot and celery together in a large stock pot over medium-high heat for 5 minutes.
- Add bell pepper, garlic, Italian seasonings, chile flake, black pepper and celery salt. Cook for 3 minutes.
- Add tomatoes, broth, tomato juice. Reduce heat to medium and simmer 10 minutes.
- Add beans, cabbage, spinach and artichokes, if using. Cook until spinach is thawed or cooked through.
- Stir in parmesean and serve.
Serve with remaining green onions, bacon and cheese.
