Mashed Potatoes Two Ways
Serves 3.
Two interesting new variations on mashed potatoes that are sure to add interest to your dinner one sweeter, and one that's more tangy. Both are prepared without butter or cream to help you watch your holiday waistline.
Vanilla Mashed Sweet Potatoes:
- 2 yams
- 2/3 cup milk
- 2 tsp. vanilla
- 1 tsp. vanilla paste (optional)
Yogurt Mashed Potatoes:
The yogurt gives the potatoes a bit of a tangy flavor.
- 3 medium russet potatoes
- 3/4 cup yogurt
- 2 cloves of garlic, pressed or minced
- 1/2 tsp. each salt and red pepper
- black pepper, to taste
Method:
Peel the potatoes, and dice them. The smaller you dice the potatoes, the quicker they'll cook.
Place them in a sauce pan. Cover with water that's 1" above the tops of the potatoes.
Bring to a boil, and cook until they're fork tender.
Drain the potatoes, and mash with flavorings.
