Broccoli Tempeh Stir-fry
Serves 3.
Ingredients:
- 1 block tempeh
- 1/4 cup tamari
- 12 oz. broccoli
- 2 tsp. oil
- 1 red or yellow onion
- 3-5 cloves of garlic
- 1 red bell pepper
- 1/4 cup shredded carrot
- 1/4 cup soy sauce
- 2/3 cup vegetable broth
- 2 tsp. chili sauce (such as Sriracha)
- 2 T rice vinegar
- 2 T cornstarch dissolved in 1/3 c. broth
- 1/2 tsp. white pepper (black also works!)
Directions:
- Marinate tempeh in tamari.
- Place broccoli florets in a zip-top bag, and microwave for 3-4 minutes until steamed.
- Heat oil in a wok or large frying pan.
- Add onion and cook 1 min. (until slightly soft)
- Add garlic, red bell pepper and carrot and cook 1 min.
- Add tempeh, and cook for 2 minutes.
- Add next 4 ingredients (soy sauce through rice vinegar). Stir thoroughly, then cover and simmer for 5-6 minutes.
- Add cornstarch-broth mixture and bring back to a simmer, and cook 1 min. or until sauce thickens.
- Stir in pepper and serve.
Serve over steamed white rice.
