Turkey and Rice Soup
This works great with leftover Thanksgiving Turkey! This also works well wth leftover chicken or a rotisserie chicken as a starting point.
Ingredients:
- 1 tbsp. olive oil
- 1 onion, diced
- 5 ribs diced celery
- 3/4 cup shredded carrot
- 3 cloves garlic, chopped
- 1 white potato, diced
- 1/2 of a bell pepper, diced, or 1/2 cup diced jarred roasted bell peppers
- 1 1/2 2 cups of leftover turkey, torn or diced into bite-size chunks
- 8 cups chicken broth
- 1 tsp. paprika
- juice of 2-3 lemons
- 1/2 tsp. red chili flake
- 1/2 tsp. dried sage
- 1 box Uncle Ben's Wild Rice
Process:
- Heat the olive oil in a large soup pot over medium heat.
- Saute the onion, celery and carrot together in the olive oil for 3-5 minutes or until just tender.
- Add the garlic and potato and saute for 3-5 minutes.
- Add the remaining ingredients and bring to a simmer. Cook until potatoes are tender and rice is cooked through.
