Warm Chicken Goo
This recipe probably serves about 4 people. It scales up very well; I've
made this for up to 30 people at once. I've named this recipe for its' creamy, gooey sauce.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 boxes rice-a-roni, in a flavor you like (I use cheddar and broccoli)
- 3/4 c. white rice
- Water as per instructions on rice, plus 1/2 cup
- 1 10.5 oz. can Cream of Mushroom Soup
- 1/2 cup plain yogurt
- 1 tsp. each black pepper, onion powder, dill, and minced fresh garlic
- Grated cheddar cheese (to taste)
Directions:
- Preheat oven to 375 degrees
- Put chicken in a 9 x 13" pan, and bake for 20 minutes.
- Meanwhile, cook Rice-A-Roni and rice with water in a saucepan. Bring to a boil, and then reduce heat to low for 10 minutes. It will only be partially cooked.
- Spread rice over the top of the chicken, and put back in the oven for another 10 minutes.
- Meanwhile, mix together soup, yogurt, and seasonings.
- Remove casserole from the oven, and spread the soup mixture over the top.
- Bake for an additional 10 minutes.
- Remove the casserole from the oven and sprinkle cheese over the top.
- Bake for an additional 10 minutes, or until cheese is melted.
