Lime and Tomato Chicken
This recipe probably serves about 3 people.
Ingredients:
For chicken:
- 6 pieces of chicken
- Salt and pepper
- 1 small can of diced tomatoes
- 1/4 c. Consorzio brand Baja Lime 10 minute marinade
- 1/2 c. lime juice
For potatoes:
- 6 red potatoes, sliced thin and boiled in salted water for 5 minutes
- 1 red onion, diced small
- 1 red bell pepper, diced small
- 1/4 c. olive oil
- 2 T black pepper
- 1/2 t. salt
- 1 T granulated garlic or 2 fresh cloves, minced
- 1/2 t. crushed red pepper
- 4 T lime juice
Directions:
For chicken:
- Preheat oven to 450 degrees.
- Place the chicken pieces in a baking dish. Salt and pepper them to taste.
- Combine the rest of the chicken ingreditents in a small bowl and stir to combine.
- Pour tomato mixture over chicken and place in oven.
- Cook 45 minutes or until done.
For potatoes:
- Combine all ingredients in a large bowl and toss to coat and mix thoroughly.
- Transfer mixture to a Pyrex or metal baking dish and roast 30-45 minutes or until top is crispy.
Serve together, with a side salad.
