Chicken Baked with Black Beans

Chicken baked with black beans and fajita-style vegetables.

Serves 3

Spice Mix:

1 teaspoon each granulated garlic, cumin, coriander, and black pepper
1/4 teaspoon crushed red pepper

Other Ingredients:

3-4 pieces of chicken (I use boneless, skinless breasts and thighs)
1 small onion, coarsely chopped
1 chopped red bell pepper or a handful of frozen mixed bell peppers (optional)
1/2 can corn, rinsed and drained (optional)
1/2 c. chicken broth
1 can black beans, drained and rinsed
7 oz. red enchilada sauce
1/2 jar salsa
Cheddar cheese, to taste (optional)

Directions:

Sprinkle spice mix on both sides of chicken pieces, and place chicken in a glass baking dish.
Bake chicken at 375 for 15-20 min.
Add onions, bell pepper, corn and chicken broth.
Bake at 400 for 15 min.
Add black beans, enchilada sauce and salsa.
Stir, and bake for an additional 15-20 min.
Add cheese, if using, and bake until melted.

Serve with spanish rice and flour tortillas.
